For centuries Herbs and Spices have been an integral part of many of the world\'s great cuisines. Today we take for granted black pepper and the other spices over which wars where once fought. At one time only kings and other wealthy people could afford such a delicacy as cinnamon. Today all supermarkets and most small grocery stores have well-stocked spice shelves offering a wonderful selection of herbs and spices.

The term 'spices' is often used broadly to include all seasonings. Spices come from the bark, roots, leaves, stems, buds, seeds, or fruit of aromatic plants and trees which usually grow only in tropical countries. Pepper, allspice, cloves, nutmeg, mace, cinnamon, ginger, saffron, and turmeric are spices.
Herbs are soft, succulent plants which usually grow in the temperate zone. Until recently cooks have had to make do with very few fresh herbs, such as sage, parsley, and thyme. Nowadays you can also find fresh basil, coriander, chervil, tarragon, rosemary, and dill. Since herbs are at their best when they are young and freshly picked, it is well worth growing your own.
Whenever someone thinks of spices, often Indian cooking comes to their mind. Indian cooking is well known for its creative use of spices. Using more than ten different spices while cooking is not considered as an excessive use of spices in Indian cooking. A typical Indian dish uses a different kind of spice to add the flavour of the food. A result should always be subtle aroma and flavour to food rather than assault to your senses.
Spices are used in Indian food in many ways. Spices may be used ground or whole, fried or roasted, dry or as paste, at the end or in the beginning of the cooking, alone or with combination. The style of cooking and thus, the use of spices depend on a particular region in India. However, the spices most often used spice throughout the India are Turmeric, Cumin, Black Pepper, Mustard Seeds, Cardamom, Cloves, Fennel Seeds, Ginger, Garlic.

Indian spices can be mixed in specific amounts to make Spice Mixtures used in daily cooking. Some of the famous spice mixtures are Garam Masala, Chat Masala etc. The composition of the mixture might vary according to region but the basic ingredients remain same. Traditionally, women in the family used to make these spice mixtures themselves. However, nowadays already mixed spices are readily found in the market.
Many of the formerly exotic Indian spices are becoming increasingly familiar to the western cook and can be easily found in any grocery store in the west. There might some difficulty finding some specific spice mixture such as Garam Masala though. If a particular spice is not available in the local grocery store, find it in a local Indian grocery store or any other South Asian store.

Paper banana leaf for serving food

Kuala Lumpur (The Star/ann) - Malaysia's Health Ministry has declared the paper banana leaves used in some Indian restaurants as safe to be used as wrapping material for food.


Director-general Datuk Seri Dr Hasan Abdul Rahman said the green paper used to make the artificial banana leaves is similar to the brown wrappers used to wrap nasi lemak.

It is lined with a thin plastic layer, which complies with the Food Regulations 1985, he said yesterday.

Dr Hasan said the ministry had investigated claims by the Consumers Association of Penang (CAP) last month that the fake banana leaves may contain colouring and ink that could be harmful to health.

Our investigations have found that the banana leaf-shaped paper was imported from India by the restaurant owner and used at the restaurants seven branches in Selangor, he said.

Dr Hasan said the ministry had tested the paper for phthalate, Bisphenol A (BPA) and various colouring agents.

Phthalates and Bisphenol A (BPA), which are used in the production of plastics, have been shown to affect the levels and functions of certain hormones in the human body.

Dr Hasan added that ministry-approved colouring was found in the sample but not phthalate and BPA.

(Those who are responsible for) food wrappers that contain toxic substances can face action under the Food Regulations 1985, which carries a RM5,000 fine or a jail sentence of not more than two years upon conviction, said Dr Hasan.

He urged CAP to forward its test results to the ministry so that it could conduct further investigations in Penang.

In response, CAP president S.M. Mohamed Idris said CAP was willing to submit its results to the ministry.

Meanwhile, some Indian restaurant operators have said that the paper leaves they have been using are Sirim-certified.
